Twice through the still.
Distillation refines the fermented liquid into spirit, and the distiller's cut decides what stays and what's left behind. Tequila is distilled at least twice, and the type of still leaves its fingerprint on weight, brightness, and texture.
Copper pot still
The traditional alembic. Copper actively strips unwanted sulfur compounds and yields a rich, weighty, characterful distillate. The classic choice for depth.
Stainless pot (with copper)
Stainless vessels fitted with copper elements. Cleaner and brighter, with the agave kept front and center.
Column still
Continuous distillation producing a lighter, higher-proof, more neutral spirit.
Triple distillation
A third pass for added refinement and a noticeably smoother texture.
These are the methods used across the category, not a list of what every cask of ours went through. Where a barrel uses a specific method, it's recorded in that barrel's specification sheet, so the catalog stays honest to how each cask was actually made.
